Getting Ready for Fall: Infused Bourbon

Roasted apples and pears, a handle of bourbon, and a jar in the dark for a month: the lazy way to have fall in a glass by the time the football starts.

Fall for me is football, Thanksgiving, and a jar of bourbon that sits in the dark for a month and does all the work. Start with a handle of bourbon, dealer's choice, and set it aside.

Cube 2 apples and 2 pears. Sweet over tart, but use whatever you like. Toss the fruit with 1/2 cup of brown sugar and 1/2 cup of maple syrup, spread it on a baking sheet, and bake at 400 degrees Fahrenheit for 25 to 30 minutes, until the fruit is soft. Take it out and let it cool all the way. Warm fruit in bourbon is a mistake you only make once.

While it cools, find a 2 gallon jar with a lid that seals well. Once the fruit is cool, put the fruit, the bourbon, and 2 cinnamon sticks in the jar, seal it, and leave it alone for 30 days. Yes, the waiting is the hard part.

After 30 days, strain out the fruit and pour the bourbon back into its bottle. Serve it over ice, make an Old Fashioned with it, or use it in any other fall drink you like.

It's worth the wait, so be patient. Thank me later.
