Festive French 75

The pomegranate is standing in for the lemon. It carries less acid, so go light on the syrup or the whole thing turns sweet and loses its spine. The arils sink, which makes the last sip a small archaeological dig.

Ingredients

Where there's a range: the low end is lighter, the high end is fuller.

  • 2 ozginLondon Dry preferred; seems to go with the champagne, but regular gin is fine
  • 1 ozpomegranate juicesimply sub pomegranate with lemon
  • ½ ozsimple syrup
  • 2–3 ozchampagne

Garnish

pomegranate arils (and rosemary sprig if wanted)

Method

Add gin, pomegranate juice, and simple syrup in a shaker with ice; shake. Pour into glass (flute) and add 2-3 oz of champagne. Garnish with arils...enjoy!
