Transcript
Well, there everybody, it is four o'clock on Friday afternoon, which means it's drink attack. So, first of all, a couple things, I just got hooked on this new Netflix show. So there's not a lot of sports going on right now, so you kind of take what you can get, the F1 series started back up, and in front of mine, Todd Smith suggested that I get an F1, and I used to watch F1 when I was a kid, oddly enough, don't know why, I think it's because fast cars and all that kind of stuff.
But I used to watch F1 when I was a kid, and there's a show on Netflix called Formula One, Drive to Survive. It is awesome, it's like, it's like reality TV shows, it's like reality TV with super fast Formula One cars, like if you haven't seen this show, you gotta watch it, and now I'm freaking totally hooked, and it's driving me absolutely insane. So I highly suggest you watch that show. Also, this week I tried something that I've been wanting to try for a long time, and some of you have seen this stuff, some of you have thought
about it, but there's this koji rice, you stuff right here, right. So I just got this on Amazon a few weeks ago, but there's a lot of stuff I've been reading out there, and I found this article in Popular Science about using this, this koji rice, to essentially kind of fast Dry aged steak, and what koji rice is. used for, its using, socking a couple other dishes and things like that to ferment things, right, and all it is is this kind of a moldy white rice, but it works. I tried it this week on a couple of New York's, and it was freaking amazing. Now, does it replace a 45 day old dry aged steak? No, but it will take an average KFC Safeway steak, and it will actually turn it into something that's, it shouldn't be. I know, I gotta take some this stuff and I'll show you what it looks like, doesn't look like much.
Can I come, my dried up little tofu pieces or something like that, there's not a whole lot to it, see little dry to price pieces, but all you got to do is take this stuff, put it in like a food processor or something like that, and give it a couple rounds, it gets really fun, so it turns is like a fine powder. Coat your steaks with that stuff on both sides, be liberal with it, and then what I did is I had kind of the traditional kind of restaurant cook, I put it in a flatiron or cast iron grill, both sides, three
minutes. So this stuff, by the way, when you put it on, it'll blacken your steak quicker, so you kind of have to, to be prepared for that. But both sides about three minutes on a side, and then I had the oven set to 400, so we've got a conventional baking oven. I was cooking three, six at the same time, but 400 degrees, and then it depends on how well you want, right. I couldn't find, probably a little too long, I did mine four minutes, so they turn out medium, is she medium rare, medium, is she, I would have probably done it, or next time I do it, I should say, I'm not gonna cook them as long, I'm probably, I like my steaks rare, so I probably good to two and a half minutes in the oven, about three minutes on the side, get that nice, that nice golden crispness on those steaks, to kind of lock in all the juice, put it in the oven and essentially bake it for a few minutes.
Holy crap, these steaks have no reason to taste as good as they do, but this stuff is amazing, and just go on Amazon, buy for like ten bucks, or you can go to we jamya and pick it up there, but super cheap and well worth it. So, Formula One racing cool, on that drive desire to show you got to watch that, you'll get hooked in a second, using the koji rice to artificially
Dry-aged your steaks on, by the way, you put that stuff on there on your steaks for a couple days, I wouldn't go any more than three days, I did mine for 48 hours and put them up on a rack, so get under it, amazing. So talked about stake stock before me one, now let's talk about drinking, because I've been needing a drink all day long. This drink is something that came out of bored, it's kind of like, I laid on the Facebook post, you know, I just got bored, so I had this
red wine open, and I don't drink red wine, I'm not a wine guy, right, but a ton of my friends are wine people, and I had it open from Bespoke, so I was making, right, and so I was looking for something else to do with it, to put it in a drink or something, I don't know of a whole lot of wine drinks, other than like, oh I've know what they're called, when you, sangria's, right, sangria's red, but I'm not, it that's not my thing. Right, um, so I was thinking of stuff to do, I got really bored, grabbed wine, I'm Like, what goes well with wine? Nothing goes well with wine from a booze perspective by itself, but I know a ton of you want me to make vodka drinks, Right, and that's not actually why picked vodka. I picked vodka because it's got no flavor, no taste, which is why I don't really like vodka that much, but it worked out pretty well on this one. So you got some red wine, you got some vodka.
Red wine to me, it's kind of tart and bitter, just want to sweeten it up a little bit, so I used our friend's simple syrup as some of that and then it became way too sweet, so I wanted to die down a little bit and add some citrusy flavors to it, to kind of cut the sweetness, and I used some lemon juice to do that in it, and I just kind of played with it until I got the mix right and it turned out really good, and then I needed a garnish, and lime didn't sound right, the lemon and lime and the wine didn't sound like it was gonna work, it might, it might have worked out, I know I didn't try it, a lemon garnish with lemon juice, and it
just kind of was, you, it's already got lemon flavor in there, berries like strawberries and stuff, it didn't seem, didn't sound and work, or didn't seem to work. This was also kind of the weekend right before the fourth of July, so it's kind of looking for something a fourth of July is she summer she drink, and my wife had a bunch of blueberries around so I'm like a no hey this would be cool, I'll use blueberries in it, and then I could call this drink like the red, white and blue, which would be cool because you've got the red wine, you've got white vodka, you got the blueberries, and that's what I was gonna name this thing, red, white and blue, but that sounded kind of, I don't know, odd, and I'm liking, okay, what can I call this drink other than that, like, how about the Patriot, that's way too manly drink for a drink with red wine, so no, how about Liberty, I could be the Liberty, because you know, vive la France,
and Statue of Liberty and all that great stuff, could have worked out well, but I didn't like that name either, and then I started doing a bunch of plan words, it's like, you know what's black and white and red all over, and you could use blackberries in this if you wanted to, but these, like, I'm colorblind, so that could be black or blue to me, you know, what's black and white and red all over, a newspaper, I was gonna call it the newspaper, that seems silly, so Molly
actually kind of came up with the name red white night and I just call it red white and 99 because dude, after one or two of these things, like, you're ready to take a little nap. So super easy drink, this is a really easy to drink to make there's not a lot of things in it. I'm gonna use star vodka, that's kind of my house vodka, I like this, it's a nice clean vodka, I get at Total Wine for like 18 bucks for a half gallon, and it's a ninety one point vodka, right, so it's pretty good. The, the wine I'm using is a Cabernet Sauvignon, it's Chimney Rock, I think, that's how you say it, for my wine loving friends that are watching out there, you're probably going to kill me because I'm bastardizing the name, or you gonna say, oh man, that's a horrible red wine, or go say, wow, that's a, that red wine's way too good to put in this drink.
I have no clue and I don't really care, it works in this drink though, pretty well, and I found Cabernet Sauvignon oddly enough, like I'm, know anything about wine, I do know that it goes well with this, I tried a couple other red wines, I couldn't tell you what the names were, but I did try a couple other ones in the Cabernet Sauvignon maybe because it's more dry-ish, I don't know, but it seems to work really well in this drink, and then our own, our old friend's simple syrup, yay, and lemon juice, right, so that's it for things, oh and blueberries, and that's actually kind of the icing on the cake, and sport, and we'll get there in just a second. So drink, super easy to make, the shake and drink, so we're gonna grab our shaker.
Okay, we're gonna start with two ounces of Cabernet Sauvignon and even smells fruitier, maybe that's why it's better than this. So we're gonna start with two ounces of this awesome possum, two ounces of vodka.
Okay, we're going to put an ounce of simple syrup in there, and by the way, like, this is just a bottle I use, you guys shouldn't be buying this stuff because it's so cheap to make, it's just sugar and water, and I think I, I think I told you guys a few weeks ago, my secret to kind of prolong this stuff, like you can make a nil stick it'll it's just sugar water, so put it in the fridge and it'll stay for a long time, but if you put about a teaspoon of vodka for every Cup, it doesn't change the flavor, the taste, and it actually prolongs it for a lot, a lot longer and doesn't get all that sugary build up. So we're gonna use the answer, simple, simple syrup, okay. And I got lazy,
I usually squeeze my lemon juice, but I'm not today because I'm late, And I'm making a mess, so in an ounce of lemon juice, okay. So we've got two ounces of red wine, I'm using cabernet sauvignon, we've got two ounces of vodka, we've got an ounce of simple syrup, remember, just sugar water, and an ounce of lemon juice. Ice, shaker, shakes.
Okay, nice and cold, it's good. Take a little sip off the top. So the coup de Gras, for this thing and it's actually not, yeah, it started out as a gimmick. The blueberry started as gimmick, but actually it makes this thing better. I'm gonna take a little bit of powdered sugar, okay, just put some in a bag. I'll take three or four blueberries, put them in there, shake them up.
Okay so I got some powdered sugar covered blueberries. I'm gonna take these bad boys, I'm gonna put them in my drink, and I know it sounds like a gimmick, but trust me, it's super good. The powdered sugar just kind of add this little extra sweetness to it, it makes it really good. So, there we go. You can see them kind of floating at the bottom, so this is my red, white, and ninety-ninth nanny night, oh ma'am, that is a good drink, super easy to make, really light, it's a great summer drink.
You know, if you can't make drinks, you can make this one. I mean, if you thought some of my drinks were hard to make, super easy, right, two ounces of vodka, two ounces of red wine, I'm using cabernet sauvignon, one ounce of simple syrup, one ounce of lemon juice, shaky shaky shaky, when the coup de gras is the finest the powdered blueberries, and this bad boy goes down easy. Mmm, that's a good drink. I like, boys, we followed our cardinal's thumb, boys, have at least two ounces of booze, and drink never any less, otherwise you're not, You're right, oh ma'am, that's good, so red
white 90 night, great drink, easy to make super simple, Kouji rice will dry-aged at stake in two days, it's amazing, oh yeah Before you eat that, you're gonna want to scrape, or before you cook, you want to get, gonna want to scrape off the koji, you write stuff, so you know, koji it, let it sit for 48 hours, the refrigerator, unlike a rack, so the air can underneath it, put it liberally, you know, on both sides of steak, scrape it off of the steak, and then what I did is I just two cold wash, so I just took the steak and I washed it off in cold water, just to make sure it was all off, pan sear in butter.
Like, what's the, like the oil free, not calcified, but I know, but butter, and then just, all you need a salt and pepper, don't put any special seasoning on it, shove it in the oven, 400 degrees, for somewhere between, probably two minutes if you like it rarer, two five minutes if you like it medium. That's amazing, and then you compare it with this lovely drink, cause it'll get freaking awesome. Steak, it'll actually go awesome with, air this one, but this would be a good mistake. So super easy, are me, so coach you,
cover steak really good, red white and ninety nine, even better, next week I don't know what we'll do, we'll think of something, maybe I'll go back to some basics. I've got a kind of a homemade Sea Breeze, it's super yummy with gin and some kind of homemade grenadine, and turns out to be really good, maybe we'll do that, I don't know, we'll do something, but this is really good, hope you guys have a great weekend, be safe, be careful out there, and
cheers.
