Pale pink under a cap of foam, tasting like a raspberry that decided to take gin seriously. Fine-strain the seeds out of your syrup, because egg white shows every bit of grit and the whole point here is a smooth top. The color has cost this drink decades of respect, and I've stopped defending it.

Ingredients

  • ½ ozfreshly squeezed lemon juice
  • ½ ozraspberry syrup
  • 2 ozgin
  • 1egg white

Garnish

3 raspberries

Method

Add all ingredients into shaker. Shake. Strain and pour. Enjoy!

Steve’s notes

Raspberry syrup: Add 1 cup sugar and 1/2 cup water to a pot. Stir over medium heat until the sugar has dissolved. Reduce heat to low, add 1/2 cup fresh raspberries, and macerate into a pulp. Fine-strain to remove the berry's tiny seeds. Optionally, add 1/2 oz vodka as a preservative. Refrigerate in a jar until ready for use.
