Fall French 75

Nobody asked for a seasonal version of the original, and here it is anyway. Keep the lemon low, because the cider brings its own soft acidity and the honey handles the sweetening — that's what leaves room for the champagne to stay dry. Shake the base cold, then top gently; bubbles don't come back.
Ingredients
Where there's a range: the low end is lighter, the high end is fuller.
- 1½ ozgin — London Dry preferred; seems to go with the champagne, but regular gin is fine
- ¼ ozlemon juice
- ½ ozapple cider
- ½ ozhoney syrup
- 2–3 ozchampagne/prosecco

Method
Add gin, lemon juice, apple cider, and honey syrup in a shaker with ice; shake. Pour into glass (flute) and add 2-3 oz of champagne. Garnish with apple...enjoy!
