Perfect Pear

Yes, the pear is only a barspoon, and no, that isn't a rounding error — it's what keeps the elderflower from reading as perfume. Cut the syrup if your pear is ripe, or this tips sweet in a hurry. The Champagne goes in last, once I've stopped congratulating myself.
Ingredients
- 1½ ozdry gin
- ½ ozSt-Germain — or elderberry liqueur
- ¾ ozlemon juice
- ¾ ozsimple syrup
- 1 barspoonfresh pear puree
- —Champagne — splash, to top
Garnish
1 pear slice
Method
Add all ingredients except Champagne to an ice-filled shaker and shake vigorously. Top with a splash of Champagne and garnish with a fresh slice of pear.
