Long afternoon, you want something tall and cold, and opening a beer feels like a commitment. There's more lime here than most mules carry, so the ginger beer has to bring real sweetness and heat or you've built a very cold limeade in a copper mug. Slap the mint before it goes in — it's the whole aroma.

Ingredients

2 ozLondon Dry gin (Beefeaters)
1½ ozLime juice
—Ice cubes
4 ozGinger beer

Lime wedge and mint sprig

Method

Pour gin and lime juice into mule mug. Add ice. Top with ginger beer. Stir to combine. Garnish with lime wedge and mint sprig.
